If he drops behind the goal then he still plays the man offside, if not then players would just step off the park to play players offside.

Surely you have to be on the field of play? That’s why I questioned whether it was offside earlier

No. The law states clearly that if a player leaves the field behind the goal line then he will be considered as being on the line.
